I concocted the most delish sweet potato mash recipe last night I just had to share. I used Greek yogurt to act as my protein. You could probably substitute with regular plain yogurt or sour cream, however Greek yogurt certainly makes it healthier!
1 large sweet potato, peeled and chopped into small squares
1/2 – 1 tablespoon butter (add more or less butter depending on how creamy you like, I only added a 1/2 tablespoon)
1.5 tablespoons plain greek yogurt
1 tablespoon apple butter
1 teaspoon garam masala
1 teaspoon nutmeg
dash of ginger (optional)
season with salt and pepper
Boil the sweet potatoes until mushy, remove from heat and drain the water. Place back on stove on low. Mash potatoes until mushy. Add the butter and stir it in until it melts. Add the Apple Butter and mix well. Add the yogurt and mix well. Add the spices. Continue to stir until all the spices are mixed well and desired taste is achieved. Voila! Healthy & delicious! Serves about 4 people
